      With accolades including James Beard Foundation “Who’s Who of Food & Beverage” inductee in 2013, Gayot Restaurateur of the Year 2011, Food Arts Silver Spoon Award winner May 2011, Bon Appétit Chef of the Year 2005, San Francisco Magazine Chef of the Year 2005, as well as the International Food and Beverage Forum’s Restaurateur of the Year 2005, Michael continues to dazzle the culinary world with bold dining concepts. Michael’s culinary and business vision led to the founding of his company, Mina Group, with partner Andre Agassi in 2002, leading to 20 concept restaurants, a lounge and the Michael Mina Wine Club.

As chefs, we must ‘Make it Nice’ during receiving and storage, washing and prepping, cutting and cooking and finally at plating and garnishing. ‘Make it Nice’ and the guest will enjoy their time with us and return time and time again.”

      A native of rural Illinois, Tony brings a unique perspective and passion to his role as the Executive Chef of Michael Mina’s Bourbon Steak at the Fairmont Princess in Scottsdale. Growing up in a family with an appreciation for team sports, cooking and gardening, Tony has a strong sense of hard work, leadership and love for food that was developed at a young age and resonates throughout his kitchen today. Tony launched his career in St. Louis, Missouri where he honed a deep understanding of running a kitchen and the business from renowned chef Charlie Gitto before heading to Scottsdale to earn his degree from Le Cordon Bleu College of Culinary Arts. For the next several years, he showcased his talents around the Valley with a variety of experiences ranging from large-scale events such as the Waste Management Phoenix Open and U.S. Olympic Track & Field Time Trials to exclusive tasting menu dinners and successfully opening new restaurants in the area. Now with the MINA Group and Bourbon Steak at the Princess for the past three years, as the Executive Chef, Tony is eager to continue the tradition of great dining while also exploring new and innovative culinary opportunities. Utilizing his connections with and passion for local farmers and vendors, he looks forward to lending a solid sense of Arizona within the menu while striving to share his experiences and expertise with the next generation of cooks.

      Jason Caballero, Advanced Sommelier

      "There are many qualities that make a great sommelier, but the most important is to remember that the position is one of service. Serving a diner the perfect beverage and listening to what it is that they want out of their dining experience trumps all the obscure wine knowledge in the world."

      Jason Caballero began his restaurant career in 2000 working as a server in Tucson. Upon being promoted to bartender and continually working on his craft, he moved to Phoenix in 2004. His first real exposure to wine came when he was hired as a bartender for the opening of Olive and Ivy in Scottsdale in 2006. Jason couldn't get enough, there was so much to learn and with a great mentor as the lead sommelier, Kyle Erickson he began to learn everything he could and his attention turned toward gaining accreditation with the CMS. Jason is an Advanced Sommelier with the Court of Master Sommeliers and is working towards sitting the Master's exam and obtaining his Master Sommelier Diploma. When Jason isn't working, he is opening a bottle with his wife, Carla, or playing baseball with his two sons; Dominick and Michael.

He brings a strong background in guest relations, spirits, wine education and service from previous positions at numerous high-profile restaurants including Pabu at Four Seasons Hotel in Baltimore, Maryland and Michael Mina’s RN74 in Seattle, Washington.

    Join our lead Mixologist for an interactive spirits course on the first and third Thursday of every month from 6 to 7 pm in the bar and lounge. $20 per person includes light canapés, three craft cocktails and 20% off any additional menu or beverage items ordered in the restaurant or bar pre or post class.

    Kids Eat Free

      A graduate of Scottsdale Culinary Institute with an Associates of Occupational Studies Degree in Culinary Arts and Science and Restaurant Management, Chef Hamrick started at the resort’s three-meal restaurant, LV Bistro as Executive Chef and went on to run La Hacienda as Chef de Cuisine, winning the AAA Four-Diamond award three years running, and the 85255 Iron Chef Competition in 2006.

From 2002 to 2005, Morris was a Chef Instructor at the Art Institute of Phoenix under Certified Master Chef Walter Lieble, and as Junior Hot Food Competition Team Coach, he earned three straight state championships and ACF Gold Medal Awards.
