      For more than two decades, Michael Mina has been a beacon of influence, passion and achievement in the culinary world. His modern steakhouse concept, BOURBON STEAK is one of the many iconic restaurants he has created during his career.

      With accolades including James Beard Foundation “Who’s Who of Food & Beverage” inductee in 2013, Gayot Restaurateur of the Year 2011, Food Arts Silver Spoon Award winner May 2011, Bon Appétit Chef of the Year 2005, San Francisco Magazine Chef of the Year 2005, as well as the International Food and Beverage Forum’s Restaurateur of the Year 2005, Michael continues to dazzle the culinary world with bold dining concepts. Michael’s culinary and business vision led to the founding of his company, Mina Group, with partner Andre Agassi in 2002, leading to 20 concept restaurants, a lounge and the Michael Mina Wine Club.

    • Jeremy McMillan, Executive Chef

      Prior to being named Executive Chef at Michael Mina’s Bourbon Steak, a AAA Four Diamond restaurant at the Fairmont Scottsdale Princess, McMillan served as executive chef at Talula’s Garden and Talula’s Daily, two popular Philadelphia restaurants.

      Career highlights also include being a top chef at several New York restaurants such as A Voce Columbus and The Bedford Post where he made John Mariani’s “List of Chefs to Watch” in 2014. Returning to Arizona is a homecoming for this former Valley resident who began his culinary career in Scottsdale, working first as a line cook at Michael’s at The Citadel and then at Zinc Bistro as Chef de Cuisine.  He is passionate about the cowboy culture and food history of the area, using indigenous ingredients, seasonality and sustainability.

    • Thomas Klafke, Sommelier

      “I’m a huge believer in continued education in my field and love to visit wineries to see the differences in winemaking first-hand. I have personally visited over 200 wineries in California, Oregon and Arizona and look forward to traveling to many more.”

      Thomas Klafke began his career as a wine steward at AJ’s Fine foods. He then worked for a few local distributors as a fine wine salesman before becoming the Store Manager at AZ Wine Co. While he was Wine Director at KAI restaurant at the Sheraton Wild Horse Pass Resort and Spa, KAI was awarded with the Wine SpectatorAward of Excellence, AAA Five Star award, Forbes 5 Star Award and Open Table’sBest Service in America award. He is a Level II Certified Sommelier with the Court of Master Sommeliers working on his Advanced Level certification.

    • Andrew McLaughlin, General Manager

      “I’m passionate about customized hospitality and strive to make sure every guest leaves having a memorable dining experience with exemplary service.” 

      Andrew works consistently to set and exceed customer service expectations, working with both high profile guests and everyday visitors. He brings a strong background in guest relations, spirits, wine education and service from previous positions at numerous high-profile restaurants including Pabu at Four Seasons Hotel in Baltimore, Maryland and Michael Mina’s RN74 in Seattle, Washington.

      Richard Sandoval brings the vibrant flavors and ingredients of Mexico into the culinary spotlight at La Hacienda, combining the bold taste of classic Mexican cuisine with timeless European cooking techniques.

      Sandoval’s career as a chef and restaurateur includes serving as a culinary consultant, television personality, cookbook author and brand ambassador. Richard Sandoval Restaurants (RSR) is a leading international restaurant group with over 35 concepts. Known as the father of modern Mexican cuisine, he combines authentic Latin ingredients with international flavors and inventive techniques, creating new and unexpected dining experiences.

      “New Mexican cuisine is very Mexican, but with its own style. I’ve been to Mexico City to eat at some of the top upscale Mexican restaurants in the world and visit the mercados, or local markets, and am continuing my travels throughout Mexico to learn more about the culture and different cuisines from state to state, pueblo to pueblo.”

      A graduate of Scottsdale Culinary Institute with an Associates of Occupational Studies Degree in Culinary Arts and Science and Restaurant Management, Chef Hamrick started at the resort’s three-meal restaurant, LV Bistro as Executive Chef and went on to run La Hacienda as Chef de Cuisine, winning the AAA Four-Diamond award three years running, and the 85255 Iron Chef Competition in 2006.

    • Katie Schnurr, Tequila Goddess

      “I love sharing my knowledge of tequila with guests teaching them how to sip, savor and enjoy selections from our more than 240 tequilas.”

      As tequila sommelier and supervisor, Katie Schnurr welcomes guests and personally manages all spirits, wine and tequila offerings. She also creates special activities and events to enhance La Hacienda’s dinner offerings, including tequila tastings, Mixology classes and Tequila 101.

    Rum and cigar aficionados are invited to enjoy hand-rolled cigars provided by Fumar Cigars paired with an exquisite rum tasting each month at Toro Latin Restaurant and Rum Bar.       Richard Sandoval collaborated on the creation of Toro, crafting a unique Pan Latin menu drawing on the cultures of South and Central America while using ingredients from Japanese and Chinese cuisine.

      Sandoval is recognized worldwide as a chef and restaurateur. He serves as a culinary consultant and works as an ambassador for Richard Sandoval Restaurants, a prominent international restaurant group with over 35 brands. Sandoval is also well known from television and for his best-selling cookbooks. His recipes for Toro and her sister properties in Hong Kong and Serbia combine authentic Latin flavors with international ingredients using innovative techniques to create unforgettable Pan-Latin dining.

    • Melissa Kelley, Rum Princesa

      “Rum has such a vast history and amazing varieties of taste, I am excited to share it with everyone! Let me help you find the perfect one!”

      Melissa welcomes guests to Toro, educating them on rum with tips on how to sip, savor and enjoy selections from over 111 rums. She also leads special activities and events including rum tastings.

      Dillon Dray relocated to Scottsdale for the opportunity to open up Toro after working at Fairmont Kea Lani, Maui Resort as Manager and Department Head of Kō Restaurant. Under his leadership, Kō was the recipient of the Aipono Award in 2013 for Restaurant of the Year in Maui and was recognized by Wine Spectator in 2013 with a Certificate of Excellence. The restaurant was also the Maui Newswinner in 2012 and 2013 for Best Resort Restaurant.

      “Throughout my career, I have been inspired by the chefs I’ve had the opportunity to work with. Inspiring others and widening their horizons through interactions with food has been an essential foundation to build my role as a leader and mentor.”

      During his culinary career, David Morris served on the opening team for Aria Resort & Casino, where he was promoted to Assistant Executive Chef. He was Executive Garde Manger Chef at Mandalay Bay Resort and Casino, Executive Chef of Anthem Country Club, Sous Chef at The Grouse Mountain Grille and Chef Tournant at Caesar’s Palace. From 2002 to 2005, Morris was a Chef Instructor at the Art Institute of Phoenix under Certified Master Chef Walter Lieble, and as Junior Hot Food Competition Team Coach, he earned three straight state championships and ACF Gold Medal Awards.

      “I have worked in the hospitality industry for over 15 years and can’t imagine doing anything else! It is such a pleasure to be a part of the Fairmont Scottsdale Princess team and turn moments into memories for our guests.”

      After receiving her Bachelor’s degree from ASU in Tourism Development and Management, Stephanie worked at Riga Tony’s as a General Manager.  She then joined the Fairmont Scottsdale Princess in 2012 where she has held multiple roles within Food & Beverage including oversight of Clubhouse operations during the annual Waste Management Phoenix Open.

One who will be casting a spell is DJ Pulse, mixing the best lounge and dance music. A costume contest at the bewitching hour of midnight brings prizes for Best Spellbound on the Bayou themed-outfit; Most Creative, Scariest and Best Duo/Group. Voodoo cocktail queens will serve mystical potions including:

    • The Light Fog - Made with equal parts ¾ oz. gin, lime juice, green chartreuse and maraschino cherry liqueur.
